Presentation
In Burgundy, at the southern end of the Côte de Beaune, the 392 hectares of the Santenay appellation are located on the first slopes of Mont-de-Sène. A region steeped in history and tradition, the area's occupation by early humans dates back to prehistoric times, while the Château de Santenay, also known as Château Philipe le Hardi, still bears witness to the terroir's connection to the Dukes of Burgundy. The etymological origin of the commune dates back to Roman antiquity, famous for its thermal waters and its spring "Santinae aquae," translated as "beneficial waters."
Terroir
Brown calcareous soils on a very fragmented Jurassic subsoil.
Winemaking
Manual harvest, sorting of grapes upon arrival at the winery.
Fermentation maceration in temperature-controlled wooden vats for 18 to 21 days.
Aged in oak barrels (30% new oak) for 14 to 16 months.
