Présentation
En Bourgogne, à l'extrémité sud de la côte de Beaune, les 392 ha de l'appellation de Santenay prennent pieds sur les premières pentes du Mont-de-Sène. Région d'histoire et de traditions, l'occupation de la zone par les premiers hommes remonte à la préhistoire, tandis que le château de Santenay, appelé aussi Château Philipe le Hardi, témoigne encore du rattachement du terroir aux ducs de Bourgogne. L'origine étymologique de la commune remonte d'ailleurs à l'antiquité romaine, célèbre pour ses eaux thermales et sa source « Santinae aquae », traduite « eaux bienfaisantes ».
Terroir
Sols bruns calcaires sur un sous-sol très fractionné du Jurassique.
Vinification
Vendanges manuelles, tri des raisins à l'arrivée en cuverie.
Macération fermentaire en cuves bois thermorégulées durant 18 à 21 jours.
Elevage en fûts de chêne (30% de fût neuf) durant 14 à 16 mois.
