Présentation
Surplombant la côte de Gevrey-Chambertin jusqu’au bois de Corton, les vignes des Hautes Côtes se situent sur un plateau derrière la célèbre Côte de Nuits, à une altitude de 300 à 400 mètres.
Terroir
Argilo-calcaire (appartenant aux roches jurassiques), les orientations des vignes varient du Sud à l’Est, captant un maximum de soleil.
Vinification
Vendanges manuelles, tri des raisins à l'arrivée en cuverie.
Vinification en cuves ouvertes thermorégulées à 28/30 °C avec pigeage puis élevage de 8 à 12 mois en fûts de chêne.
